RECIPE OF THE WEEK


Tomato Vodka Tortellini

1 can chopped tomatoes
1 large onion, peeled and diced
1 large clove garlic peeled and minced
1 1/2 cups heavy cream
3-4 pieces pancetta thinly sliced
1/2 cup vodka
1 pinch red pepper flakes
1/4 cup chopped fresh basil
2 packages fresh cheese tortellini olive oil

Bring a pot of salted water to a boil. Meanwhile, mince the garlic and dice the white onion. Chop the basil and the pancetta. Saute the pancetta in olive oil. When it starts to crisp, saute the garlic and onions. Add a pinch of red pepper flakes.Remove the pan from the flame and add the vodka. Return to the flame and add heavy cream and chopped tomatoes. Stir and cook for a few minutes while the tortellini is cooking. When the tortellini is done, add to the vodka sauce, throw in the basil and serve.
