RECIPE OF THE WEEK

Parmesan Zucchini
3-4 medium large zucchini
2 cups grated parmesan cheese
salt and pepper to taste
Turn on the broiler and then slice the zucchini into ½ -inch thick slices on a bias. Start the cooking process by steaming the zucchini on high heat, on the stovetop, with a little water and a tightly fitting lid. When the slices of zucchini are soft, after about 7-8 minutes, drain them and place 'em on a sheet tray. Top each slice with grated Parmesan cheese and season them with salt and pepper. Throw them under the broiler and cook until the cheese starts to crisp. You might like to rotate the pan once or twice while they're broiling. Pull them out of the oven when they're done and serve them with any simple pasta or grilled chicken or fish!
