Pumpkin Seeds

1 medium large pumpkin
vegetable oil
salt to taste

As you're scooping out the inside of the pumpkin, place everything into a large colander. Preheat the oven to 350 degrees and place the colander into a large bowl in the sink and fill it up with cold water. As you're washing and separating the seeds, discard the pulp into the sink disposal until there's nothing but seeds left in the colander. Let the seeds drain for a few minutes, then spread 'em out on a large sheet tray and drizzle a little vegetable oil onto the seeds to help them crisp up while they're roasting. Put a generous amount of salt on them, stir 'em up a little bit, and pop them into the oven. You'll have to toss them around a couple of times while they're baking, you want them to be a nice golden color when they're done.

sorbet, lemon, orange or raspberry
fresh mint sprigs

Dice the apples really fine and place in a bowl. Cover the apples with enough fresh cider to accomodate the number of guests you plan to serve. Cover the bowl and refrigerate until it's time to serve. Then, spoon some of the apples and cider into an appropiate dish and top with a small scoop of the sorbet of your choice. Garnish with a sprig of fresh mint and serve immediately.

STRAWBERRY YOGURT SMOOTHIE

      After a long day of school or work, you just want to relax and have a snack. Instead of grabbing chips or other traditional snacks, try something new - make a smoothie! They are so refreshing, quick to make, and most importantly healthy for you! Milk and yogurt are full of vitamins and minerals - such as calcium - that help to build strong bones and keep them strong! Research has also shown that consuming three servings of low-fat dairy products a day can also help in weight loss.

1 ½ cups cold fat-free milk
1 ½ tsp. Crystal Light Calcium Tangerine-Strawberry low-calorie drink mix
1 8 oz. container low-fat vanilla yogurt
1 cup frozen strawberries
     Please call ingredients in blender container in ordered list; cover. Blend on high speed until smooth. Serve immediately. Enjoy!

Yield: 4 Servings
