Apple Pear Crisp
1 T. butter at room temperature
2 ripe pears, peeled and seeded, then sliced
3 apples, various ones, peeled, seeded and sliced
3 T. butter at room temperature
1/4 C. granola
1/4 C. chopped walnuts
1/4 C. plain bread crumbs
1/2 C. brown sugar
1/4 t. cinammon
Rub a 9X13 inch glass baking dish with the single tablespoon of soft butter. Place the apple and pear slices in a bowl with some water and lemon juice. In a mixing bowl, blend the 3 tablespoons of butter with the granola, nut meats, breadcrumbs and cinnamon until it's a crumbly texture. Drain the fruits, dry on paper towels, then evenly distribute them in the buttered baking dish. Spread with the crumbly topping and pop into a 350 degree oven and bake for 25-30 minutes. Remove, allow to cool 10 minutes or so and serve.

EASY ITALIAN VEGETABLE PASTA BAKE
Yield: 6 servings
1 cup mostaccioli, cooked, drained
1 jar (27 ½ ounces) light pasta sauce
1 package (8 ounces) 2% shredded reduced-fat mozzarella cheese, divided
2 cups thinly sliced mushrooms
2 cups sliced and halved yellow squash
3 cups sliced and halved zucchini
Mix mostaccioli, sauce, 1 cup of the cheese and all the vegetables. Spoon into 13x9-inch baking dish; sprinkle with remaining cheese. Bake at 375 degrees F for 20 to 25 minutes or until thoroughly heated. Enjoy!
