If your life is busy like mine and you don't always have a long to make a nutriuos meal. Bistro angel hair pasta is perfect for you and and your family to help them get there 3 dairy products a day.

Bistro Angel Hair Pasta
Makes 4 servings
Prep time: 10 minutes
Cook time: 7 minutes
Ingredients:
1 package (8-ounce) angel hair or spaghettini pasta, uncooked
1 can (14 1/2-ounce) diced tomatoes, undrained
3 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
1 clove garlic, minced
2 tablespoons sliced pitted kalamata olives (optional)
1/2 teaspoon coarsely ground black pepper (optional)
1 3/4 cups Sargento® Bistro™ Blends Mozzarella with Sun-Dried Tomatoes & Basil Shredded Cheese, divided
Cook pasta according to package directions. Combine tomatoes, oil, vinegar, garlic, olives and pepper in a large bowl. Add pasta; toss. Stir in 1 cup cheese. Top with remaining cheese.

Sauerkraut Festival Recipes
Pesto Kraut
¼ lb. linguini, cooked and drained
4 0z. sliced fresh mushrooms (about 2 cups)
1 tablespoon butter
1 cup sauerkraut, undrained (use packaged kraut, not canned)
1 teaspoon red pepper flakes
! tablespoon minced garlic
2 tablespoons Tastefully Simple dried tomato and garlic pesto
2 tablespoons water
2 tablespoons olive oil
Freshly grated parmesan cheese
Cook linguini according to package directions; drain. Meanwhile cook mushrooms in the butter in large skillet for 3-4 minutes over medium heat. Add undrained kraut, red pepper flakes, and garlic. Continue cooking until all liquid is gone, about 6-8 minutes. While the mushroom/kraut mixture is cooking, combine the dried tomato and garlic pesto, water and oil in a microwave safe bowl. Microwave on high 1 minute; let stand 5 minutes; stir.
Place linguini in large bowl; add sauerkraut/mushroom mixture and mix. Pour pesto mixture over the top; stir until all is coated well. Add grated parmesan cheese on top and enjoy.
Picnic Ham with Dumplings and Sauerkraut Gravy
1 picnic ham, baked
Dumplings
4 cups flour
4 eggs, beaten with ¼ cup water
1 teaspoon salt
Combine all ingredients, forming a stiff dough. Divide into 8 pieces and form into balls; let rest for 20 minutes on a lightly floured board. Drop dough balls into salted boiling water. Cover and cook for approx. 15 minutes or until probe inserted in center of a dumpling comes out clean.
Gravy
1 large can (1 lb. 11oz..)sauerkraut, rinsed and drained
1 qt tomato juice
Place sauerkraut in a sauce pan with enough water to cover and simmer until tender (15-20 minutes). Add tomato juice and continue cooking. When ready to serve, thicken with a roué made from 2 tablespoons of better and 2 tablespoons of flour.
Serve dumplings family style with gravy and sliced ham.
Sauerkraut Chocolate Cake
One 2 layer chocolate cake, prepared
Filling
1 can sauerkraut, rinsed and drained
1 can sweetened condensed milk
4 egg yolks
¼ cup milk
2 tablespoons corn starch
½ cup chopped pecans
Combine corn starch, water, and egg yolks; beat lightly. Put this mixture into a medium sized sauce pan and add sweetened condensed milk. Cook on medium heat, stirring CONSTANTLY, until mixture thickens and bubbles. Remove from heat, stir in sauerkraut and pecans.
When cooled, spread on each cake top, assemble the 2 layers and serve.
Beef and Kraut Roll-ups
½ lb. thinly sliced roast beef
1 cup sauerkraut and 1 tablespoon horseradish, mixed together
2 (or more) sliced tomatoes
1 teaspoon cumin (optional)
4 10" flour tortillas
salad dressing (Mayo or Miracle Whip)
Spread tortillas with salad dressing. Next spread sauerkraut/horseradish mixture on the salad dressing. Add tomato slices evenly on the kraut. Next layer the roast beef, then sprinkle cumin on beef. Gently roll, jelly roll fashion. Makes 4 wraps. Can be cut straight across or diagonally into bite sized pieces.
