RECIPE OF THE WEEK

Cheese Puffs
1 1/2 cups water
1/2 tsp salt
8 Tbs unsalted butter
1 generous cup all-purpose flour
5 large eggs
1 1/2 cups grated swiss cheese
Preheat the oven to 400 degrees and bring the water, salt and butter to a boil in a large pot. While that's happening, grate the Swiss cheese. When the water comes to a boil, turn the heat down, add the flour all at once and stir it with a wooden spoon until it comes together in a ball. (Scrape the sides down as you go, you want the paste to be thick but smooth!) Add the dough to a bowl of an electric mixer and let it cool for about 5 minutes. Then add 5 large eggs, 1 at a time, using the paddle attachment, with the mixer on low. Let each egg incorporate before you add the next one, then add the grated cheese and mix that until it's well combined. Scrape the dough into a large zip-lock bag and snip one corner off with a pair of scissors. Pipe the cheese paste onto lightly greased and floured baking trays. The puffs should be about 1-inch in diameter and about 1/2-inch apart. Pop those onto the center rack of the oven to bake ...they'll take between 20 and 25 minutes…you want them to be a nice golden brown when they're done
