Potato Cakes


2-3 cups leftover mashed potatoes
1/2 -3/4 cup diced ham
2 small minced green onions
1/3 cup grated cheddar cheese
1 large egg
3-4 Tbs flour
salt and pepper to taste

Put the left over mashed potatoes into a mixing bowl and add the diced ham, minced green onions, grated cheddar cheese and 1 large egg. Season it with salt and pepper to taste and add the flour to help firm it up. Mix it well and shape it into equal sized patties. (Dust them with a little more flour to help them form a crust as they cook.) Add a few tablespoons of vegetable oil to a medium hot, nonstick pan. Add the patties 1 at a time to the pan and let them cook until they develop a nice crust. Flip them over and do the same thing to the other side! (They'll take about 4 or 5 minutes on each side. )They're ready to serve when they're hot all the way through.

Dandelion Salad


4 boneless, skinless chicken breasts
1 large bunch dandelion greens (about 6-8 cups chopped)
1 large spring sweet onion (like Vidalia or Texas sweet)
8-12 slices bacon
splash of cider vinegar
1/4 cup or so real maple syrup
2 tsp dijon mustard
salt and pepper to taste
olive oil for sauteing

Peel and slice onion and wash and chop the dandelion greens. Pound the chicken breasts between sheets of plastic wrap, season with salt and pepper and sear them on the stovetop, in olive oil, until they're cooked through and nicely browned on both sides. Put the chicken in an oven proof dish and keep it warm in a low oven. Cook the bacon (in batches if you have to) in the same pan you cooked the chicken in. When the bacon is nice and crisp, take it out of the pan and keep it warm with the chicken. Then saute the sliced onions in the same pan with the rendered bacon fat! After the onions have softened, add a small splash of apple cider vinegar and a good splash of maple syrup. Stir in the Dijon mustard, throw the greens in, crumble the bacon on top and turn the heat off. Stir it around for a minute and serve the dandelion greens over the top of the individual chicken breasts
